CEYLON CLOVES
Clove of commerce is the dried, fully grown but still unopened flower buds of the evergreen tree Syzygium aromaticum of the family Myrtaceae. These are one of the highly prized spices, widely recognised all over the world for their medicinal and culinary qualities. At their early stages of development, flower buds are pale in color which gradually turn into green, and, finally, develop into bright-red clove buds at the time of harvesting, which are known for its antiseptic and soothing properties as well as for its unique flavour, and it is safe to say the taste of this spice is like no other taste in the world.
Grades
Each individual bud is picked up by hand when they reach 1.5 -2 cm in length, which is then sun dried and then graded according to size, colour, and appearance with the presence of stems and headless ceylon-clove.
